Westcombe Cheddar Cheese 1Kg. Westcombe mature cheddar cheese is a traditional Farmhouse cheddar made with unpasteurised milk and traditional rennet. It is an unpasteurised mature cheddar cheese produced by Tom Clothier from Batcombe, about 7 miles from Frome. This cheddar is their flagship cheese, a hand-crafted traditional cheddar made in much the same way for over 100 years. This cheddar was once known as five-mile cheddar as you would still be tasting it five miles down the road. It is honoured with the Artisan Somerset Cheddar designation from Slow Food – only three kinds of cheese to have this accolade.

As befits an artisan cheese of this kind, there is a significant amount of hand-making during the process. The cheeses are bound in cloth so they can mature for 12 to 18 months. This marvellous hard Cheddar cheese is tangy with a great depth of flavour. .It’s a proper tasty cheese but without that jarring sharpness.
The traditional rounds are aged to develop a strong, slightly peppery character and produce another gold medal winner at the World Cheese Awards. Recently they have built their own impressive cave-like maturing house which has the almost perfect conditions levels for maturation.
They say: Westcombe Cheddar has a deep complex flavour with a mellow lactic tang and long notes of citrus, hazelnut and caramel. The texture is structured and firm, with a smooth breakdown that keeps the flavours lingering on your palate.
You should enjoy the warm lasting flavour with crackers and chutneys or simply ‘au natural’. Above all, your palate will thank you for it. This cheddar also makes a great sandwich or as a centrepiece to a ploughman’s lunch. You’ll be delighted when you taste this traditional Somerset Cheddar.
