These Spelt & Fig sourdough crispbreads are inspired by our love of Sweden, the home of crispbread. In Sweden, these light, thin, sourdough crispbreads are called knäckebröd. They are the perfect host for cheese. The Spelt and Fig taste extra special with blue cheese. At Peter’s Yard, we are on a mission to bring the very best of Swedish baking to the rest of the world. Always using authentic recipes and completely natural ingredients, we, therefore, want to share our passion and our favourites with you.
Sourdough & Fig Crispbreads Production
We use simple, natural ingredients including organic spelt flour, organic fresh milk, dried fig pieces and our precious sourdough, which is allowed to ferment for 16 hours before each batch is made. Baked until golden and crisp, they are the natural choice for a salty blue cheese.
We roll the dough until it is delicate and thin, then dust with rye flour and gently bake for a dappled, crisp and slightly wobbly cracker. Savour the crunch with a strong blue cheese. We combine Swedish tradition with British craft and natural ingredients to create our hand-baked sourdough crackers. Each batch starts with our signature sourdough starter, fermented for 16 hours. Baked to perfection. In the case of unleavened crispbread, bubbles are introduced into the dough mechanically. Traditionally, this was done by mixing snow or powdered ice into the dough, which then evaporated during baking. Today, the dough, which must contain a large amount of water, is cooled and mixed until bubbly. Sourdough & Fig Crispbreads are delicious!
